There are 12 varieties of banana and not all its banana blossoms are good for cooking.Among the good ones I know includes saba,señorita,bulkan,inabaniko,utungan and lagkitan(these are Filipino terms but I dont know their English terms)
Ingredients
•banana blossom,•2Tbs of salt or medium size lemon.•1cup flour•3 eggs•5cloves garlic,finely chopped•½c scallion,finely chopped•½tsp black pepper,pulverized•oil for frying(needs atleast more than a cup)
~procedure
1)Prepare the banana blossom,make sure to use fresh one.Remove the purplish/pinkish petals from its stem one by one.set aside the yellow-tipped fronds.These are little buds that eventually become bananas.Others just discard it but Im using it in my recipe.After removing all the petals that can be peeled,chop the remaining yellow petals and heart at the center.Stack the purplish pink petals neatly and chop it finely.
2)Put the chopped petals in a big bowl and prepare the buds which you set aside (this can be optional as it takes time preparing it.)Remove the matchstick-like thing at the middle in each bud.Cut off the hard base of the bud and chop the yellow fronds.Add it to the chopped petals.
3)Squeeze the lemon,if lemon is not available you may use the salt.Mix it proportionately.Let sit for 30 min to remove the bitter taste.
4)Wash it until water turns clear and also to remove salt.
5)Combine and add all remaining ingredients to the banana blossom.Mix proportionately.
6)Heat oil in frying pan..Scoop up spoonfuls of the mixture and fry it on the hot oil,reduce the heat to medium-high.remember to flatten the mixture before it hardens while frying.Turn it over to cook the other side,careful not to burn it.
7)Remove cooked ones and place it on a colander placed on a plate to drain off excess oil.Repeat until no mixture is left.
Serve while still hot and crispy.It can be eaten as snack with ketchup sauce, or as viand paired with rice.
**note:if mixture is dry,add 1 more egg to reach the right consistency.If mixture is too wet,add a tablespoon of flour..
Now lets see what banana blossom can give us.From banana shoots to its fruit,to its blossom this amazing plant is edible.Well you might not know but banana blossom has a lot of health benefits..It's rich in vitamins and mineral which includes vitamins A and C,has also calcium and iron,protein and fiber.It's good food for people with diabetes by regulating blood sugar,it helps people with anemia by producing sufficient hemoglobin.It fights off infection by healing wounds.It helps boosts mood and reduces anxiety.And nursing mothers with less breastmilk also benefit from it,helps them in producing ample supply of milk.
**Aside from banana blossom,banana peels are also edible.I tried adding it on the banana blossom patty and it's really good.But it needs to be boiled first before using it on a menu.
This banana blossom is a very good substitute for meat for its protein content hence, a good food for vegans.
