1. Rafaelo slices the cake

Ingredients for the white crust - Rafaelo slice cake:

5 egg whites

50 g flour

150 g of sugar

150 g of coconut

5 egg whites

50 g flour

150 g of sugar

150 g of ground walnuts

50 g cocoa

1/2 bag of baking powder

Ingredients for the filling - Rafaelo slice cake:

200 g of sugar

10 egg yolks

1 vanilla sugar

1 vanilla pudding

3 dl milk

250 g butter

Preparation of white crust:

1 step: Whisk the egg whites in solid snow and gradually add sugar and stir all the time.

2 step: Add coconut, flour, baking powder, and juice of half a lemon to the egg whites, then mix gently.

3 step: Pour the prepared mass into a rectangular pan lined with baking paper and bake for 20 minutes at 170 ºC.

Preparation of brown crust:

1 step: Whisk the egg whites in solid snow and gradually add sugar and stir all the time.

2 Step: Add walnuts, cocoa, flour, and baking powder to the egg whites, then stir.

3 step: Bake the prepared crust mass in the same way as the previous one.

Filling preparation:

1 step: In a suitable bowl, combine the egg yolks, vanilla sugar, sugar, pudding and milk, and mix well.

2 step: Cook the prepared mass until it thickens.

3 step: Leave the thickened mass to cool, then add the whipped butter and mix well to make the mass compact.

4 step: Coat the white crust with 3/4 of the prepared filling, cover with a brown crust, then apply the rest of the filling and distribute evenly.

2. Coconut cake

Ingredients for biscuit - Coconut cake:

10 egg whites

180 g of sugar

2 vanilla sugars

2 teaspoons plain flour

200 g coconut

Cream Ingredients - Coconut Cake:

10 egg yolks

200 g powdered sugar

250 g butter

100 g of white chocolate

100 g of white Euro cream

200 ml sweet sour cream

Biscuit preparation - Coconut cake:

step: Mix the egg whites into the snow. Then add a little sugar and continue to mix the egg whites until you get solid snow, or until all the sugar is used up.

step: Add flour and coconut and mix the mixture lightly with a ladle until all the ingredients are combined. Spread the mixture on the bottom of the cake tin (26 cm), which should be covered with greaseproof paper.

step: Bake the coconut biscuit for 25 minutes at a temperature of 160 ° C. Use a toothpick to check if it is baked.

Cream preparation - Coconut cake:

step: Steam the egg yolks with powdered sugar for about 7-10 minutes. Towards the end of cooking, add the crushed white chocolate, then mix the cream until the chocolate melts.

step: Transfer the cream to another bowl, cover the surface with cling film and leave to cool.

step: add room temperature butter and euro cream to the cooled cream and mix everything well. Finally, mix in the sweet-sour cream.

step: Cut the biscuit into three equal parts. Coat the biscuit and the whole cake with cream and decorate with melted chocolate or coconut if desired.

step: Leave the coconut cake in the fridge for a few hours before serving.

3. Munchmallow cake

Ingredients for the crust - Munchmallow cake:

10 egg whites

10 tablespoons sugar

5 tablespoons flour

50 g ground walnuts

1/2 baking powder

a little grated lemon zest

Ingredients for the filling - Munchmallow cake:

10 egg yolks

3 vanilla puddings

1 tablespoon flour

700 ml of milk

200 g of sugar

250 g margarine

3-4 boxes of Munchmallow

Other ingredients:

whipped cream

Crust preparation - Munchmallow cake:

step: Whisk the egg whites with the sugar and then add the other ingredients.

step: Divide the resulting mixture into two parts and bake two crusts for 10-15 minutes at 180-200 ºC.

Filling preparation - Munchmallow cake:

step: Mix egg yolks with sugar. Separate one part of milk (about 100 ml) and mix with pudding, then add it to the yolks as well as a spoonful of flour.

step: Mix everything well so that there are no lumps. Bring the rest of the milk to a boil, then add the previously prepared mixture to the milk slowly and mix quickly so that it does not burn.

step: Cool the filling and add the margarine. Divide the fil into two parts.

step: In one part add the biscuits to be separated from the foamy part of the Munchmallow, crush them with your hands and stir, and the other part of the filling remains yellow.

step: Arrange as follows: crust, dark part of the filling, foam Munchmallow caps, yellow filling, crust.

step: Munchmallow cake can finally be decorated with whipped cream.
