Auyama at breakfast

Auyama is a vegetable with it you can prepare different food recipes, it is commonly used in vegetable soups; Auyama is called a pumpkin in some countries.

The auyama has a round but irregular shape, it is not a perfect circle, it is rather similar to the bulky earth in the middle and flattened at the upper and lower ends; its shell is hard, its interior is firm and orange.

After the brief description of the auyama, I am now going to teach you how to make pancakes for breakfast with the auyama.

Pancakes are the result of a mixture of either wheat flour, oatmeal or in this case auyama with other ingredients to cook in a pan, their shape is round with a fluffy texture.

Now the ingredients for the preparation of auyama pancakes

  • 2 cups cooked auyama

  • 2 units of eggs

  • 2 tablespoons of milk powder

  • ¾ cups of wheat flour

  • Ground cinnamon to taste, some recipes recommend using 1 pinch

  • 1 spoon of sugar

  • Oil

The ingredients are for daily use in our kitchen so you will have no problem getting them on the market.

This recipe is easy to make but eggs, milk, wheat flour, sugar and oil are some of the most expensive food products in the country, however preparing and enjoying this nutritious recipe is well worth the effort.

Preparation of auyama pancakes

  • Wash very well and cut the auyama into pieces, without removing the shell, place in a pot with 1 liter of water, cook over medium heat until soft.

  • Once cooked, turn off the burner and strain the auyama, reserve in a container and allow to cool to room temperature, when it is cold remove the pulp of the auyama from the shell enough to make 2 cups.

  • With the electric hand mixer mix in a bowl the 2 cups of auyama pulp and the eggs, without stopping mixing add the powdered milk, continue mixing and add the wheat flour that will give firm consistency to the mixture during cooking finally the cinnamon, sugar and a drizzle of oil.

Heat a pan greased with edible oil over medium heat, then with the help of a ladle pour a portion into the pan, when small holes or holes form on the surface of the mixture it is time to turn or cook until it is browned by both sides.

Serve hot and serve with honey

With butter, grated cheese and a rich coffee with milk

With chocolate

With strawberry and blueberries
