There is a type of beef soup that was a form of cuisine in Soviet Georgia:
Ingredients:
2 lbs beef
2 medium-sized onions (well chopped)
4 oz of rice (uncooked, rinsed in water)
2 large tomatoes (peeled & pureed with a blender)
2 Tbsp Tkemali sauce or vinegar
8 twigs fresh parsley (2 whole, 6 chopped)
8 twigs fresh cilantro (2 whole, 6 chopped)
1 Tbsp khmeli-tsuneli spice mix
2 cloves garlic (pressed)
2 red hot chili peppers
Salt
Black pepper
Instructions:
Cut beef into pieces, place in a large boiling pot. 8-10 cups of water and boil. Simmer on low head for 1.5 to 2 hours till meat is tender.
Add rinsed rice, onions, 2 twigs of parsley and 2 twigs of cilantro. Simmer for another 20 more minutes.
Add chopped parsley, chopped cilantro, garlic, hot chili peppers, spice mix, Tkemali sauce/vinegar, tomatoes, salt and pepper. Cook for another 15 minutes.
