Here is a dish original to the United States- simple potato skins. While similar dishes have been around, potato skins as we know it have mostly been documented since 1974.
Ingredients:
6 small to medium sized russet baking potatoes
extra virgin olive oil
kosher salt
freshly ground pepper
6 strips of bacon
4 oz. grated cheddar cheese
1/2 cup sour cream
2 green onions, thinly sliced
Instructions:
Bake potatoes after scrubbing the potatoes clean with a microwave or an oven (if using oven, pierce a few times with knife or fork and bake in 400 degree Fahrenheit oven for about an hour. Use microwave, rub with olive oil and cook each potato for 5 minutes)
Cook bacon with microwave or on a skillet on medium low heat for 10 to 15 minutes or until crisp.
Cut potatoes in half and scoop out the insides, leaving one-fourth of an inch of potato on the skin.
Bake the potato skins on 450 degree Fahrenheit oven. Then rub olive oil on skins, outside or in while sprinkling salt. Cook with 10 minutes on one side, then 10 minutes on other side.
Add cheese and bacon.
Top with sour cream and onions to serve.
