I want to share with you the production of a special Turkish dessert. In fact, I do not think I can make baklava even though I know it theoretically. Because making baklava is a very demanding dessert and requires manual skill.
Today, neighbors are making "baklava" for Feast of Ramadan (Eid al-Fitr) gathered in our house. Baklava making at home in Turkey is a tradition especially for religious holidays.
Ingredients:
2 eggs
1 water glass measure of oil
1 glass of water Milk
1 cup of yoghurt
1 tablespoon of vinegar
1 packet of baking powder
1 cup of starch
Flour as needed.
For the ลerbet (syrup) :
5 cups of sugar
4.5 glasses of water
1 few drops of lemon juice
The filling for baklava is:
300 gr. chopped walnuts.
We mix the flour and water and knead the dough. We divide the dough we prepared into 3. We roll out 10 equal doughs from the dough divided into 3. We use starch while opening the doughs and between the doughs. The starch prevents the doughs from sticking together.
We put the 10 nests we prepared at the bottom of the tray. Then we spread the inner material we prepared on it evenly. Then we put 10 more dough on the tray. We sprinkle the filling material again. We put 10 more doughs.
Our tray is now ready. We cut the baklava in our tray to form a geometric pattern. After cutting our baklava, we pour 300 grams of butter (or a mixture of oil and margarine) on the baklava with the help of a brush. The traditional and most delicious thing is to use butter. However, we used margarine and oil. Now our baklava ready to oven.
We haven't baked it yet. However, after our baklava is out of the oven, we pour the sherbet we prepared on the baklava.
Walnut and pistachio can be used as baklava filling material. We made baklava with walnuts. There are also different recipes for baklava in different regions of Turkey.
Important details:
1) After getting out of the oven, wait for the baklava to cool down (lukewarm). The sherbet (shurup) must be hot. For a crispy baklava, baklava should be warm and its sherbet should be hot.
2) Sugar and water measures in baklava syrup should be exactly the same.
There may be details missing in this recipe. However, I hope it gave you an idea about Turkish baklava making. Since our baklava has not been cooked yet, I could not take pictures of its cooked form. However, after it is cooked, I will add that photo to this article.
Baklava can be made with different materials. The ingredient of Antep baklava is pistachio. You can also make a baklava with a mixture of pistachios, walnuts and hazelnuts. You can use pistachios, walnuts, hazelnuts for decoration.
