Mediterranean Steak with Rice Pilaf, Roasted Veggies and Tzatziki Sauce The other night I made some Mediterannean seasoned steak with a rice pilaf and veggies. I made a Tzatziki sauce to go with it too. This was a pretty easy meal to make. I just cut the zucchini and carrots into 1/2 inch pieces and roasted at 450 degrees until they were browned (about 15 minutes). Crispy Cheddar Chicken with Loaded Mashed Potatoes and Asparagus I made this the other night for my wife. It was supposed to be panko on the chicken, but since my wife can't eat gluten I had to substitute for gluten free bread crumbs instead. So the batter on the chicken was just a tablespoon of melted butter mixed with the gluten-free bread crumbs, a little salt and pepper, and cheddar cheese. Made my first trip to the new Shake Shack in Fishers, Indiana. Shake Shack is my favorite fast food restaurant. Their burgers are amazing. I used to have to wait till I took a trip to Chicago or New York to get some Shake Shack. Having one 20 minutes from my house doesn’t bode well for my waistline or heart.
