Crispy Cheddar Chicken with Loaded Mashed Potatoes and Asparagus. I made this the other night for my wife. She's not supposed to eat gluten, so I had to sub out the panko I was supposed to use to bread the chicken with Gluten-Free Breadcrumbs. It was barely noticeable.
