Refers to a pinoy shrimp fritters. They are made of small shrimps, usually with head and shell intact. That's mixed with batter and deep-fried until crispy. The okoy has many varieties made with vegetables like mung beans sprout amd julienned squash are also popular. One of the most famous regional variants is vigay okoy from ilocos sur, which is made with glutinous rice flour and spring onions.
Okoy is typically eaten with a spicy vinegar to offset the oiliness.. Its a delicious crunchy snack that can be found in many pinoy restaurants as well. Personally, i enjoyed eating it with rice.
