All over the world, on the first of October, the "World Coffee Day" is celebrated. A day to enhance the benefits and customs associated with this drink. A day to raise public awareness of fair trade (ICO's objective). This day was established for the first time in 2015 by the ICO (International Coffee Organization), an intergovernmental organization that deals with the import and export of coffee.
Coffee culture
Everyone knows that coffee beans are the seeds of the fruit of the coffee plant, extensively cultivated in Central and South America, India, the Antilles, Africa and Arabia. The taste of the raw beans, sour and astringent, is accompanied by a different smell for each quality of coffee and has a particular colour depending on the quality, which extends throughout the light and dark range of grey, yellow, green, to brown and blue. There are as many as 60 species of coffee plants: there are only a little more than 25 that produce the coffee we drink. Among these 25 plants, only four make coffee. The "Arabica" type coffee, from which comes the famous Moka variety, which gives its name to the Neapolitan coffee machine. This type of coffee has small beans and has a copper green colour, as well as an intensely aromatic fragrance. It is the most widespread type of coffee on the market, and one of the most appreciated. The "Robusta" type coffee is characterised by a higher caffeine content than the previous species, with even smaller but very perfumed beans, the resulting coffee is very full-bodied. Most of the most used coffee blends today derive from a mix of these two types, however, although less widespread or well-known, two other types of coffee are finding their way among consumers. "Liberica" coffee is grown in Indonesia and West Africa. It is a very delicate blend, both in taste and smell. The "Excelsa" coffee, which was recently discovered only in 1904, is a coffee with an intense taste, very similar to the Arabica type.
The coffee ritual
Espresso coffee (the classic Italian coffee) at the bar is a pleasure that many people like to treat themselves to before starting work or for a break during the day. Coffee should be drunk espresso at the bar. Espresso coffee yes, but which blend? The most widely used is the one composed of "Brazilian" (40%), "African" (40%) and Central American (20%), it is not just about taste, but rather a multisensory experience, the richest that a bar can offer. Every bartender has his dosing secrets. The customer must observe the cleanliness and care of the machinery these two things are a sign of the bartender's attention to the product. Then the colour and consistency of the cream, which must be a hazelnut colour. But never as in this historical period is the cup of coffee a homemade affair, so dear old Moka is back in the limelight.
