INGREDIENTS
FOR RAVA DHOKLA:
• 1 cup rava/ sooji / semolina /bombay rava
• 1 cup thick curd / yogurt, slightly sour
• ½ tablespoon sugar
• 1 tablespoon adrak/ ginger, grated
• ¼ cup water, or as required
• 1 tablespoon eno fruit salt or ¾ tablespoon baking soda
• 1 tablespoon chili paste
• 2 tablespoon cooking oil
• salt to taste
FOR TEMPERING:
• 2 tablespoon cooking oil
• 1 tablespoon rai/ mustard seeds
• ½ tablespoon jeera / cumin seeds
• ½ tablespoon til /sesame seeds
• pinch of hing / asafoetida
• few curry leaves
• 2 green chili, slit
• 2 tbsp coriander leaves, finely chopped
INSTRUCTIONS HOW TO COOK
Let us start firstly, take a large mixing bowl take rava and curd in it. Then additionally add ginger, sugar, chili paste and salt. mix it well to form a thick batter.
Rest for 30 minutes or till rava absorbs moisture.
Now its a time to add water as required and mix well.
get the dhokla to idli batter consistency.
additionally add eno fruit salt in it.
mix gently till the batter turns frothy and then transfer to the greased plate.
steam the dhokla batter for 15 minutes.
PREPARE TEMPERING
prepare the tempering by heating oil in pan.
Now add mustard seeds, sesame seeds, jeera and hing.
once the mustard seeds splutter add in curry leaves and green chili in it.
saute for a while and once the tempering splutters spread the tempering over dhokla. you can also sprinkle coriander leaves.
and Now its a time to cut the dhokla to desired shape.
finally serve soft and spongy rava dhokla with green chutney with your friends and family and share your experience.
I surly gonna try This.... I make sooji haluwa but never made dhokla.. I dint even taste it..
