Yesterday's Budget Pork Afritada

Afritada is a type of Filipino stew, another classic tomato sauce-based dish adapted from Spanish cuisine. But yesterday, my mother cooked a typical Pork Afritada. It was different from the usual recipe, why? Let's find out here. 😊

Here's the recipe

Ingredients

Β½ kg pork cut into serving pieces

2 piece potato cubed

1 piece carrot sliced

1 can green peas

3 pieces bay leaves

1 piece red onion chopped

2 teaspoons garlic minced

1 cup of water

1 pork cube

Β½ teaspoon sugar

3 tablespoons cooking oil

achuete for color

Salt and ground black pepper to taste

Did you see any tomato sauce? You do not mislooked it, she didn't add tomato sauce because we're out of budget, instead, she used a cup of water for the base sauce. 😊

Instructions:

1. Heat the oil in a cooking pot. Saute onion and garlic until the onion softens.

2.Add pork cuts. Cook for 30 seconds. Turn it over and cook the other side for another 30 seconds.

3.Add the achuete to the water until it colors. Drain.

4.Pour the colored water and the pork cube. Cover. Let boil.

5.Add dried bay leaves. Cover the cooking pot. Continue to cook in medium heat for 30 minutes.

6.Add hotdogs and carrot. Cook for 3 minutes.

7.Add potato. Cover the pot and cook for 8 minutes.

8.Add green peas. Cook for 2 minutes.

9.Season with salt and ground black pepper.

Serve!

It's very simple and easy to cook. Even there's no tomato sauce, it tastes so good.
