FOODlog #70: Lettuce Wrap with Hokkien-style Stir Fried Jicama

Last week me and my Mum cooked one of Penang's signature dishes that's made with jicama known here locally as 'sengkuang'. This is a veggie wrap that's super appetizing and absolutely delicious!

Besides the prep work which will be the part of the cooking process that takes the longest time, the rest of the work is fairly easy to prepare and make this dish. The ingredients that you'll need are jicama, carrots, shiitaki mushrooms, Chinese celery, and some pork.

STEP 1

For the pork you can either use pork belly or loin and you'll need to boil it in salted water for about 15-20 minutes or until cooked. After which it's then cut into slices and set aside for later.

STEP 2

All the vegetables need to be julienned into strips which you can use a mandoline to prep it. This will significantly cut down the time of prepping the jicama and carrots. The ratio of jicama to carrots should be 5:1 at least. Of course you can also adjust this to your liking but it should be predominantly jicama as it's to highlight it as the main ingredient for this dish. The mushrooms need to be sliced as well and then you're ready to start cooking.

STEP 3

In a large pot or wok, add some oil and on high heat, stir in the jicama and start to fry it. After about 5 minutes and they're slightly soften, add the carrots, mushrooms, and pork in.

STEP 4

Add in the seasonings of soy sauce, oyster sauce, dark soy sauce, salt, and white pepper then give everything a good mix and let it cook for another 10-15 minutes. Next, add in the Chinese celery, taste to see whether it needs more seasoning and add the seasonings accordingly.

Serve this as a filling for some lettuce wraps and you'll have yourself a delicious meal
