FOODlog #61: French Beans & Water Spinach Stir Fry

A simple lunch cooked by my Mum for both lunch and dinner. We normally eat the same dishes for both lunch and dinner as it's easier and also cheaper to cook bigger portion meals especially when you're cooking for 5 people. It saves a lot of cooking time and also you'll only have to busy yourself in the early part of the day with prepping meals.

We had 2 different vegetables for lunch and dinner today though which was 'kangkung' or also known as water spinach for lunch and for dinner my Mum cooked french beans. Both of them were cook with the similarly which were stir fried and also had similar ingredients which were garlic and seasoned with salt and oyster sauce. The only thing different were that there were onions stir fried together with the french beans. Both dishes were super delicious and this simple way of stir frying vegetables is one of my favorite ways to have vegetables.

She also cooked a meat dish which was minced pork stir fried with potatoes and seasoned with soy sauce, oyster sauce, garlic, and salt to taste. It's a dish that I grew up eating and my son loves to eat this. He always asks my Mum to cook it for him at least once a week and if she doesn't he'll remind and nag her that she forgot to cook it which is quite amusing.

What a delicious lunch and dinner we had together as a family, always satisfying and enjoyable.
