FOODlog #48: Bitter Gourd Cooked 2-Ways
Mum cooked some super delicious lunch using an ingredient called *bitter gourd*. Bitter gourd is a type of gourd that has some bitter taste to it but if prepared correctly and cooked right it'll give an amazing natural sweetness and a unique and amazing flavor.
She cooked 2 dishes which were bitter gourd with slices or pork and a bitter gourd omelette. These are some of my favorite dishes and it's always such a treat when my mum cooks these.
The bitter gourd with pork is a fairly simple dish. Bitter gourd is cut into slices then soaked in salted water. The salted water will draw out moisture from the bitter gourd which is bitter. You can also just rub it with salt and leave it for 10-15 minutes then rinse off with cold water. The bitter gourd is then stir fried in a wok with some oil, garlic and shallots, and some pork slices. Season to taste with some soy sauce or oyster sauce and some salt and you're done.

For the omelette, the bitter gourd is sauteed for a couple of minutes then beaten eggs goes in to make the omelette. A super simple dish but extremely delicious. I mean, who doesn't love a good omelette?

She also cooked a non-bitter gourd dish which was baked beans with potatoes. It's just canned baked beans and cooked with potatoes that's been diced and also some onions.

We ate all these dishes with rice as usual. Wonderful meals cooked with lots of love. Yums! ~~
