FOODlog #422: Malaysian Ayam Masak Merah with Quail Eggs
My colleague chef cooked this for our staff meal on Monday night for dinner. Man was it delicious!
'Ayam Masak Merah' is a Malaysian dish which translates to Chicken Cooked Red. As you can see the dish is reddish in colour and that comes from the sambal gravy it's cooked in.
Onions cut into rings are added at the end to give the dish and Sambal and extra added sweetness which pairs so well, making the dish that much more delicious!
She also prepared some Quail eggs by simply hard boiling them. It pairs perfectly with any sort of Sambal and this one especially as its spicy and sweet from the onions.
She also made a vegetable stir fry of garlic with Kailan which tied the whole meal together paired with simple steamed white rice.
Such a delicious meal out together. My sort of comfort food of spicy Sambal chicken with rice. Absolutely delicious!
