FOODlog #42: Chicken & Dumplings Stew

Cooked my signature chicken & dumplings stew today for lunch. Its a pretty simple dish but packed full of flavor and really wonderful to enjoy during a cold and tiny weather like today.

I use roasted chicken for this dish but you could use just raw chicken for it. I think roasted chicken gives it much more flavor than just regular chicken.

I start off with sautéing onions, carrots, celery and some tomatoes with butter. Tomatoes are opinional. After the vegetables soften a little, add in 2-3 tablespoons of all purpose flour. Sautée them another 1-2 minutes then add in water and also the chicken. At this point I season in with salt, black pepper, white pepper, and some chicken stock cubes. I also add in some dried herbs to this. You can use your favorite herbs. Bring this to a boil then lower the heat to simmer.

In the meantime, I make a egg dough with flour and eggs. For every 100g use 1 egg. After combining the flour and eggs, knead the dough for 15-20 minutes then let it rest for another 15 minutes. I then rolled them out and hand tore them and add to the chicken stew.

They come out chewy and delicious combined with all the vegetables and the soup which is packed full of flavor from all the ingredients and roasted chicken.

Super delicious and hearty stew on a cold and rainy day. The best!
