FOODlog #419: Nasi Lemak with Rendang Cockles
My kitchen staff colleague cooked staff meal dinner the other day and she made some amazing Nasi Lemak with cockles cooked in a rendang sauce.
The rice is steamed with coconut milk and some aromatics like garlic, shallots, and pandan leaf that she Sautéed in oil. It's all thrown into a rice cooker to cook.
For the cockles, she made a rendang sauce using Turmeric leaves, Kaffir Lime leaves, and loads of aromatics like ginger, Galangal, onions, garlic, Lemongrass, and spices like Turmeric powder and a slice or 2 of tamarind slice for some slight sourness. The rendang also has coconut milk and roasted coconut flesh that's been charred which gives it a thick consistency and earthy aroma and flavor once cooked.
The sambal was one she made earlier and we just heated it to have it with the rice. She also made fried anchovies and sliced cucumber to go with everything.
Managed to even get a twin yolk egg for my fried egg tonight. Such a delicious and satisfying meal for dinner!
