A dish that combines East & West food ideas making it a mashup of creativity that dances on your palate.

It starts with the star of the dish, a locally farmed and produced Century Duck Egg that is crafted to perfection without any off-putting after taste but a creamy center and concentrated egg flavors.

Then it's encased in a chicken mince meatball/sausage recipe of mine that gives this dish that familiar scotch egg look and at the same time adding a heavy meat element to the dish that compliments the dish.

Its then coated with Panko and deep fried to golden brown and crispy, cut open then smoked with Apple Wood to add another flavor enhancer to highlight the already amazing century egg.

Drizzled with a 2-week fermented honey with slices of red chilies, garlic, shallots and basil, gives this dish a kick of sweet, spicy and savory that really pops in taste and presentation.

Its all tied with the familiar accompaniment with century egg - Pickled ginger that ties everything together!
