FOODlog #412: Lemon & Garlic Chicken with Broccoli Medley
For Staff Meal dinner tonight I made a medley of broccoli items that consist of a soup and roasted broccoli paired together with a simple lemon garlic & Thyme oven roasted chicken.
For the chicken, I used boneless chicken thighs and marinated it with lemon zest, lemon juice, minced garlic, and fresh thyme, seasoned with salt and black pepper.
I then roasted it in an oven together with some baby eryngi mushrooms at 250 degrees Celsius for 8-10 minutes until the skin was nice and golden brown. The aroma of the chicken coming out from the I've was so appetizing and fragrant.
For the broccoli, I used half of it to make a soup by simply blending together chicken stock, butter and some cream. It came out really tasty and delicious.
The other half of the broccoli I marinated it with chicken powder, black pepper, minced garlic, and butter then into the oven it went for 7 minutes at 250 Degrees Celsius and the dish is done.
I plated it with the soup at the bottom followed by the chicken, broccoli, and baby eryngi mushrooms scattered on top.
A delicious meal mainly using the oven that you can do in your own home too!
