Tasting beef mechado for the first time ever. It was cooked by one of my Filipino colleagues some months back and now writing this post on the last day of the year, I'm feeling thankful that I got to meet him, build a friendship with him, worked together for a year, and most of all had all the wonderful delicious food that he made for us.

Gonna miss working with him and being served such wonderful and delicious Filipino cuisine but I've got lots more to food posts to write which will definitely bring back the memories.

Beef Mechado is a Spanish inspired Filipino dish cooked with potatoes, carrots, Peppers and lemon peels.

Its a well balanced dish that has some slight citrus notes from the lemon peels that paired really well with the natural sweetness of the vegetables.

The potatoes and beef chunks soaks up the stew so perfectly and makes every bite packed full of flavor and so satisfying.

We had this with rice which was the perfect vehicle to soak up all that delicious beef gravy from the stew.
