FOODlog #380: A Chicken Burger
This is a burger on the fairly new menu at the cafe I work at. It's a really good chicken burger that's juicy, flavorful, crispy on the outside and tender on the inside.
The chicken is a boneless chicken thigh that we marinade in a buttermilk brine overnight. It consist of buttermilk, harbanero hot sauce, cayenne powder, paprika powder, garlic powder, pickle juice, dried oregano, MSG, and black pepper.
This is brined overnight or up to 5 days in the fridge. Next, for the dry drench, we mix salt, pepper, onion powder, and garlic powder.
When an order comes in, it's drenched in that dry seasoned flour mix and then deep fried for 6 minutes in a 170 degree Celsius and flipped in between for even cooking.
The burger is topped with coleslaw, the fried chicken, chipotle mayo, and pickled jalepeno, sandwiched in between buttered brioche sesame buns that are fragrant and buttery. Super delicious burger that has become a favorite amongst customers and as well us the cafe crew.
