FOODlog #364: Oyster Po' Boy Sandwich
After the recent debacle last month at the Good Vibes Festival where it got cancelled because of some idiot kissing on stage, our cafe was hit with lots of unsold goods where we needed to add to the menu to cook so it doesn't go to waste.
One of the items were the po' boy sandwiches. We now have a Cajun chicken sandwich, shrimp po' boy and an oyster po' boy sandwich.
I love the oyster po' boy not because the oysters are great but because the sauce that goes with it is superb!
It starts with the Brioche buns that are toasted with butter then lettuce, tomato slices, and pickles go in. The breaded deep fried oysters go on next then it's topped with the amazing cilantro lime aioli which is super delicious! I now use it on everything from fried chicken to eggs. This sauce is absolutely amazing. Fresh, slightly tangy and so delicious!
Hopefully we get to recover the lost as there is still 60-70% of leftover stock left that can't keep forever.
