FOODlog #358: Chinese Chicken Soup
Sometimes at the cafe we don't have the time nor energy to cook any complicated food for our staff meal so one of our go-to dishes to make are one-pot meals.
I cooked this Chinese chicken soup the other day with tofu, pickled vegetables, and tomatoes and it was so delicious. It's a one-pot dish that you just need to throw in everything into the pot and let it cook.
It starts of with some oil and sauteing some garlic then the chicken and goes to brown and develop some flavor. Next the tomatoes and pickled vegetables go in and then seasoned with some oyster sauce to taste.
The pickled vegetables are also slightly salty so you don't need to add any salt to this dish. Add in water to make it a soup like I did here or lesser water and it will be a dryer stir fry dish.
