FOODlog #354: Creamy Chicken & Mushroom Spaghetti
Another day another staff meal to make. This time a made a quick and easy 1 pot sauce with spaghetti. It was a chicken and mushroom white sauce that is really easy to make and feeds 7-8 people.
It starts off with a bechamel sauce. In to a pan, add in butter and some oil. This is so that the butter doesn't burn. Next mushrooms that have been sliced are added to the pan and seasoned with salt and pepper. Saute until they change a little in color then add in equal amount of flour to the butter you added in earlier.
Next add in the chicken. I'm using chicken breast and I've sliced them up roughly. Season with salt and pepper and then the milk goes in.
Add in dried oregano and Worcestershire sauce to flavor the sauce and then finally add in spinach and turn off the heat. The residual heat will cook the spinach perfectly. Give it a final season with salt and pepper to taste then serve it up with your favorite pasta.
I served this with spaghetti as it holds the creamy rich sauce really well. The mushrooms give it an earthiness and paired really well with the chicken and spinach.
Super easy one pot dish that takes no time to cook.
