FOODlog #353: Supernova Cheeseburger
A new burger on the menu after a month of R&D. This is new cheeseburger that I'm also the supplier of. My brother makes the patties and we supply the cafe I work at with the patties.
The Brioche sesame buns are supplied by another supplier so the only thing we make in-house is the sauce which has been same "not Big Mac" sauce. We took inspiration from the McDonald's Big Mac sauce but gave added some twists of own.
In the sauce we have, mayo, mustard, paprika, pickles, pickle juice, sugar, and garlic confit. It's a very well balanced sauce that goes superb with the cheeseburger and compliments the beef patty.
For the patty it is a 80:20 ratio of lean meat to beef fat and we sear it on the griddle for 1 minute on each side then we top it with a grilled cheddar cheese and soy caramelised onions which we make in house as well.
A really well balanced burger we finally created and it's super delicious.
