FOODlog #339: Char Kuey Teow

Nowadays whenever we have a certain craving for a particular dish, our first thoughts is to whether we can make it instead of going to buy it.

Today we had some cravings for 'char kuey teow', a classic Malaysian dish of stir fried flat rice noodles. One of the kitchen chef's made this and man was it as good as it gets.

He made a sauce mix of soy sauce, oyster sauce, dark soy sauce, and blended chili together. This is the sauce mix for stir frying the noodles later.

He started with a hot pan with oil and stir fried some prawns. Next the other ingredients like fish cakes, garlic, and the noodles go in. Next, the sauce mix goes in and is stir fried vigorously.

The noodles a pushed to one side and beaten eggs are added the pan to make some scrambled eggs.

Once the eggs are cooked, it's then mixed up with the noodles and bean sprouts and garlic chives are added to the mix and stir fried for another 2 minutes.

If the noodles get a little dry, just add in some water.

The dish is done and boy was it delicious. It tasted as authentic as it gets and the blend of flavors were savory and so amazing. Simple delicious and a dish worth trying to make yourself 😊👍
