FOODlog #321: Beef Chili Oil Fettuccine
2 Saturdays ago, I cooked lunch for the staff meal and made some spicy noodles. We had minced beef from our burger R&D that has been going on so I used the patties and repurpose them into making a sauce from the mince.
I started with sautéing some garlic and onions then added in the mince beef together with chili oil that we make at the cafe. Stir fry everything for a couple of minutes until the beef browns and then season it to taste with salt and pepper.
For the garnish I used spring onions for some freshness and then the noodles go in. I used fettuccine for this but you could use any of your favorite pastas and it'll work just fine.
Stir fry everything on high heat for a couple of minutes and the dish is done.
Serving it in a bowl I topped it up with a drizzle more of chili oil and the dish is ready to eat.
It was spicy, savory, and packed full of umami flavor and a wonderful chili and garlic aroma coming from the oil. Super lush dish that is a flavor explosion every slurp of the noodles. Absolutely amazing! ~~
