Sometimes at work, for our staff meal, we cook instant noodles for our lunch and add some ingredients to make it look like a fancy ramen. We love noodles and every week we tend to have at least a day where we have some sort of noodle dish.

Either we make our own bowl of broth to pair with noodles or we use instant ramen and give it our own toppings of choice which is often whatever ingredients we have at the store.

This time we had some instant ramen with a spicy broth by the Nissin brand. The texture of the noodles were Springy and had a nice mouthfeel to it. The broth was bright orangey red but although it looked really spicy, it was fairly mild and enjoyable.

We topped the bowl of noodles with beef pastrami, blanched bok Choy, fried fishballs, a hard-boiled egg, and some freshly sliced spring onions to give the whole dish some freshness and lovely contrast of color.

A simple and delicious bowl of hot noodle soup which is especially yummy on a cold and rainy day.
