FOODlog #313: Fire Roasted Chicken & Cherry Tomatoes

One of the best meals I ate that my Filipino cooked recently was a chicken dish that he cooked. He used chicken legs and thighs to make this dish which had a really tender and juicy outcome compare if you would use chicken breast.

He started with cooking white button mushrooms with a chili oil that he made with cumin seeds, coriander seeds, sichuan peppercorns, black peppercorns, garlic, and ginger. He added 2 cinnamon sticks and salt to taste and the dish was done.

He also cooked a fire roasted cherry tomato dish with the same oil and it was the best tomatoes I've eaten in my life, not even joking.

It tasted sweet, and so packed full of flavor because of the chili oil and cooked it in a cast iron pan on super high heat flaring up the pan and fire roasting the tomatoes. Man it was soooo delicious!

Both the chicken and the tomatoes were absolutely phenomenal. A dish that I'll definitely be keeping in my list of recipes to cook. We are these 2 dishes with rice and it was just amazing! YUMS! ~
