Last week my colleague cooked lunch for the staff and he made some Spicy Ramyeon topped with pan seared smoked pork belly, some enoki mushrooms, a poached egg, and some freshly sliced spring onions.

The Ramyeon noodles were from an instant noodle pack that all you need to do is cook it for about 3-4 minutes in some hot water. Add the seasonings from the packed and you're done. Simple but readily available and easy to make, not to mention super delicious!

The smoked pork belly were a thick cut slab of pork belly that he simply pan fried to get some nice color to it. It was extremely fragrant and such a generous portion for our staff meal.

The enoki mushrooms were simply pan fried as well in the bacon fat from searing the smoked pork belly. A very efficient way to use leftover bacon fat from the pan rather than throw 'em away.

For the poached egg, it was a sous vide poach egg from the shop that we use. A perfectly poached egg with a creamy golden yellow egg yolk center. Absolutely amazing with the noodles and spicy broth.

A delicious lunch on a cold and rainy day.
