FOODlog #194: Lotus Root & French Beans with Miso Butter
We had some lotus root and French beans delivered to the cafe last month and used them for our staff meal.
My Filipino colleague cooked the lunch but I helped prep some of the ingredients like slicing the lotus root. I used a Japanese mandolin to slice it nice and thin. It was so thin you could even see the table through the lotus root chips.
The lotus root is then stir fried with the French Beans and seasoned with a Miso and butter sauce to give it a real kick of umami flavor. Just about 7-8 minutes of cooking in a pan over high heat and its done.
We also had some hard-boiled eggs that weren't pretty and up to service standard so I used it and cooked it with some leftover 'sambal' from another meal we had. I simply heated the eggs and the sambal in a pan and it was ready to be served.
For our meat, I went to the supermarket at Gardens Mall to buy 2 slabs of roasted pork belly which was also roasted and the staff handling the area helped to cut up the meat into bite size pieces.
We ate everything with steamed white rice which we simply cooked in a rice cooked.
Simple and delicious lunch to replenish our energy for work.
