Another lunch meal cooked by my Filipino colleague. This time he made some fettuccine with a cheese and cream sauce with smokey bacon.

It was a fairly simple recipe with the fettucini just simply boiled in a pot of salted water. It's drained after cooking and then tossed in some oil so that the pasta doesn't stick.

For the sauce, it starts with sautéing the bacon until its brown and caramalised. The smell was amazing and it was thick cut as well which you don't normally find.

Heavy cream is added next and pecorino cheese which is made from sheep milk. Lots of black pepper was added to give it some warmth and balance the creaminess of the sauce.

The sauce was super rich and creamy but a little too salty which I think was due to the pecorino being salty and also the smoked bacon was also very salty. So it was very heavy, rich, and salty which wasn't a very pleasant experience and the didn't pair well. We did add some stir fried kale on top that gave it little more balance.

The bacon by itself was brilliant though. Smokey and tasted really delicious. Maybe next time we will cook it with pasta and some garlic to make an aglio olio style instead of a cream sauce.
