FOODlog #181: The Greenslut Sandwich
There's this burger/sandwich that looks at Superluna cafe but not many people order this item. Its a fun dish to make but we rarely ever get to make it. Its called the greenslut sandwich which I personally don't like to name the dishes I make with weird sexual derogatory terms but not my cafe so it is what it is.
Anyway, the dish though is quite beautiful and has interesting combination of flavors.
It's starts with the brioche burger bun being buttered and toasted till golden brown. Sliced Portabello mushrooms that have been oven roasted with garlic, Korean chili flakes, and oil are then pan seared and heated up.
The grilled Portobello mushrooms make the first layer of this burger. Next a runny scrambled egg is cooked with butter and spring onions to give it a nice color and creaminess to the burger.
After that, pesto made of sweet basil, garlic, almond flakes and olive oil is added on top. A habanero sauce is laced on top to give it some heat and a vibrant red orange color and finally a slice of aged cheddar cheese is melted on top.
It looks super beautiful and various cooking techniques is required to make this dish which makes it fun to make in the kitchen.
