FOODlog #167: Fried Rice Vermicelli (Bihun)
My Mum cooks super delicious fried noodles. Whether it's thick noodles or rice vermicelli like this one she did the other day, they are super delicious.
This 1 she cooked was with shiitaki mushrooms which gives the noodles a nice earthy savory flavor. Slices of pork tenderloin are also stir fried together with the noodles as well as some vegetables like carrots, garlic, onions, and some green vegetables.
It's all stir fried in oil and then the rice vermicelli (bihun) that has already been soaked in water and soften earlier are added to the wok to stir fry together with the other ingredients. It's then seasoned with soy sauce, oyster sauce, and some dark soy sauce for color.
Season to taste with some salt and also MSG and you're ready to serve. She topped the meal with a fried egg that's perfectly cooked, crispy on the edges with a soft egg white and a runny egg yolk. It pairs so well with the fried noodles and it was a really delicious meal!
