FOODlog #154: Chicken with Ginger & Wood Ear Mushrooms
My Mum cooked a super delicious lunch the other day. She made 2 dishes which were stir fried chicken with ginger and wood ear mushroom and a vegetable dish of long beans with dried anchovies and ginger.
The chicken is cut into slices which you can use either chicken breast or chicken thighs. She used chicken breast. First some oil is heated in a wok and garlic and ginger slices go in. After they get fragrant, add in the chicken and wood ear mushrooms and season with soy sauce, oyster sauce, and some salt to taste.
I really love this dish a lot which my Mum doesn't always cook it so it was a real treat to have it the other day.
The other dish was long beans that has been cut into roughly 2 inches length then stir fried with garlic and dried anchovies that have been washed. The long beans go in last then it's seasoned with oyster sauce and salt to taste.
Fairly simple in terms of prep and ingredients that you can easily get at any supermarket. Delicious and healthy dishes that we eat with white rice. Yums! ~~
