FOODlog #129: Oven-Baked Chicken Thighs With Vegetables

Recently we celebrated my wife's birthday. Some of her former high-school friends got as a her birthday present a brand new electric oven. It looks so nice and shiny and I get to use this new oven to cook as well.

We recently cooked a meal of a 1 tray meal. Super easy to cook and easy to clean up as well since everything is cooked all together in 1 tray. We made oven-baked chicken thighs with carrots, bell peppers, onions, and potatoes.

My wife marinated the chicken thighs overnight with butter, smoked paprika, and salt. She also made some cuts into the chicken thigh so that it'll cook more evenly as they were really plump and she stuffed it with some slivers of garlic to give it even more flavor.

The vegetables were diced roughly and seasoned with the same mix. We also melted some more butter together with smoked paprika to baste it when it cooks. We set the oven to 180 degrees celcius and cooked it for 30 minutes.

After the first 30 minutes, I removed the tray and basted the chicken with the melted butter and smoked paprika mix and also toss the vegetables a little. It then goes back into the oven now at 250 degrees celcius for another 20-30 minutes. This is to crisp up the skin and char the vegetables which makes everything taste extra delicious.

The chicken was so tender and juicy and the flavor and aroma was so intense and fragrant. The smoke paprika gave it a nice smokey flavor and aroma and the vegetables were all tender and full of flavor. Super delicious meal and the kids really enjoyed the meal too.

So happy that we got a new oven and we'll definitely be utilizing it to create and cook more delicious meals.
