FOODlog #119: Prawns & Mince Omelet
Mum cooked one of my favorite dishes and we eat it quite often as it's inexpensive, nutritious, and most importantly, delicious!
It's and egg omelet cooked with onions, carrots, prawns and minced pork. About 6-8 eggs are whisked and beaten then seasoned with some soy sauce. We normally season eggs that are beaten with soy sauce and not salt as it dissolves better and seasons the eggs more evenly.
First oil is heated in a wok/pan and then the thinly sliced onions are the first to fry. Cook it for about 3-5 minutes and then add in the carrots, diced prawns, and minced pork and fried till golden brown and fragrant then the eggs go in. Let it cook for about 1-2 minutes then flip or scramble them, whichever you prefer and let it cook on the other side for another 1-2 minutes. remove it from the wok and it's ready to serve.
My wife also made a dish which was stir fried cabbage and carrots with turmeric. Everything for this meal was sort of the same color and although sort of dull in color contrast, it was by no means dull in taste.
Super delicious eaten with white rice, not to mention inexpensive and easy to make.
