My Mum cooked some delicious lunch the other day. Two simple dishes that we eat every now and then for a typical lunch. We have these dishes with white rice and normally a meat or protein packed dish and another vegetable dish for our needed fibers.

The meat dish she cooked is a very simple dish with only 5 ingredients. Slices of pork tenderloin but you can use any cut of meat for this or even chicken slices, fresh tomatoes, garlic, soy sauce, and oil.

Simply heat up some oil (any type of oil), and then add in garlic that has been minced and saute it until it is fragrant. Once the garlic is fragrant, add in the meat and fry it for about 2 minutes then add in tomatoes that have been roughly chopped. Season everything with some soy sauce and salt. Add in some water if you'd like some gravy with the dish and cook for another 3-5 minutes and you're done!

For the vegetable dish, she made some mixed vegetables. An assorted vegetable dish of whatever you have in the fridge. That day she used some greens, carrots, cauliflower, and some baby corn. Stir fry all of this with some garlic and oil and add in oyster sauce and salt to taste for the seasoning and cook them for 5-7 minutes. Super quick and easy meal that's packed with nutrients.

A simple meal with minimal ingredients and most importantly, healthy and delicious!
