FOODlog #111: Coconut Curry Chicken & Stir Fried Watercress
My mum cooked some delicious chicken curry 2 weeks ago. Sadly this was my last meal before I had food poisoning not because of her food of course but coz I had an iced milk tea before going home and felt weird after drinking it.
Anyway, I remembered that my Mum's curry chicken was super delicious. It was chicken pieces like the drumstick, wings, and thighs that were cooked in a red curry mix that she bought. She also added in big onions, shallots, ginger, garlic, and blended all these together to fry in some oil.
After they are fragrant, she added in the chicken to cook and after about 5 minutes, the red curry mix and some potatoes join the party in the wok. After these cook for a couple of minutes, she added in a box of coconut milk and then leave it to simmer and stew for about 30 minutes. The coconut milk gives a thicker consistency and also makes it a lot richer.
After the chicken is cooked and potatoes are fork tender, she adds in more salt to taste and then it's done a ready to serve.
She also cooked a vegetable dish which was stir fried watercress with garlic and seasoned with salt. Super simple but it was really delicious. The watercress is so refreshing and had a nice crunch yet tender all the way through. Super delicious pairing with the curry and white rice.
