Herbs and spices help you to develop a healthy respect and appreciation not just for various cuisines but for different cultures because they have a fascinating history. Nations fought wars over them. Sure glad we don't have to fight any more. Now we can just go to the grocery store.

In addition to their medicinal value, the right use of herbs and spices can turn an everyday meal into a very enjoyable and memorable event. Most cultures eat the same foods but the different distinct flavors are created by the seasonings they use.

When I eat Mexican food I can usually detect cumin. Indian food? Cardamon and/or curry. Middle Eastern food? Cinnamon. Italian? Oregano and red pepper flakes. Filipino? Lemon grass. Chinese food? Ginger.

And then there are the "blends" used in different cuisines like garam marsala (Indian), herbes de provence (French), ras el hanout (Tunisia, Algeria, and Morocco), etc.

I often say, with choices limited, especially when it comes to meats, what is in your spice rack makes all the difference, and before you know it you can create a million different dishes with a million different flavor profiles even though the foods are all essentially the same.
