Pork Mechado

Thank God it's Friday! So, this is our Friday breakfast. Let's have a delicious easy-to-cook meal to start the last day of the work week! ****Ingredients**** Pork (sliced in cubes) 3 tbsp of Soy Sauce 1 Calamansi Can be substituted with Lime Garlic (minced) Onion (diced) Potato (in cubes) Frozen Green Peas Bell Pepper You can have this sliced in cubes but since my husband is not a fan of this, I had to make Batonnet cuts of this (the long ones) Knorr Pork Cube Can be substituted with Beef Cubes 6 oz of Tomato Sauce 2 cups of Water Oil Salt Ground Black Pepper ****Procedure**** Marinate Pork in Soy Sauce and Calamansi for at least 15 minutes. Heat Oil in a pot. Then, saute Garlic and Onion until it softens. Add the marinated Pork including the marinade and cook until pork turns light brown. Pour Water and add the Tomato Sauce. Stir to mix it evenly and let it boil. Add the Pork Cube, *since this is no longer available in my country, I used Knorr Beef Cube instead.* Let it cook in low heat for 40 minutes. Add the Potato and Green Peas. Let it cook for another 10 minutes. Stir in the Bell Peppers and cook for another 5 minutes. Add Salt and Ground Black Pepper to taste. Serve! Hope you enjoy this dish.
