Dynamite Lumpia
Dynamite lumpia is one of my favorites! It is spicy and cheesy at the same time. We can eat it as snacks or eat it with rice. We can even eat it while drinking some beer.
Ingredients
Chilli pepper
Minced garlic
Diced onion
Ground pork
Lumpia wrapper
Salt and pepper to taste
Procedure
Make a slice from top to bottom of the chili pepper. Remove the seeds. If you want to make it real spicy, you can leave some seeds because it adds to the spicyness. Wash it and set aside.
Please use plastic gloves when you take out the seeds because it will burn your hand! Just don't touch it with your bare hands.
Saute onion and garlic in oil on a frying pan. Once onions are soft, add ground pork until the colors will change. Season with salt and pepper. Not too much salt if you have the salted lumpia wrapper.
Transfer in a bowl and strain the pork to remove the oil.
Slice the cheese lengthwise.
On a large plate, lay flat the lumpia wrapper and put the chili pepper on the wrapper. Put some cheese on the chili pepper (don't stuff it, just form a straight line) and stuff the ground pork on the chili pepper (not too much pork because we need to close the chili pepper)
Close the chili pepper by rolling the lumpia wrapper. Dab it with water.
You can store this in the fridge. I have stored mine for a week and it stills tastes great.
To cook this, deep fry the lumpia until golden brown, around 3 to 5 minutes.
Dip it with a sauce. Just mix mayonnaise and ketchup. Enjoy hungry tummies!
