In addition to its great benefits in the process of digestion and maintaining intestinal health, a study conducted by experts from the Turkish "Mustafa Kemal" University showed that the curd or "milk" as it is called in Syria and Iraq, and "yogurt" in Egypt, protects against influenza.

The study was conducted by a team of Turkish experts headed by Professor Dr. Nizami Duran, Head of the Department of Microbiology at the Faculty of Medicine at Mustafa Kemal University in the Turkish state of Hatay.

Prof. Nizami Duran said that the team obtained, through a study conducted in the laboratories of Mustafa Kemal University, important results regarding influenza prevention.

Duran told Anatolia correspondent that the study was called "Investigation into the Activities of Microorganisms and Their Impact on Important Human Pathogens", and it was prepared with the support of the Coordinating Unit for Scientific Research Projects at the University.

Duran noted that the study dealt with curd and whey, which contain many bacteria important to the digestive system of mammals.

He explained that the research and experiments conducted by experts on animals revealed very positive results for milk bacteria inside the digestive system.

Duran noted that curd and whey contain a high level of "probiotic" bacteria, noting that "probiotics" are beneficial bacteria that help maintain intestinal health and avoid diarrhea and stomach-related health problems.

He added that "probiotics" and microorganisms found in curd and whey provide protection against influenza or colds, as well as the great help they provide in the process of digestion.

Duran indicated that curd and whey help produce antigens known as "immunoglobulin", which is one of the most important branches of antibiotics for the immune system.

He said: "Through the study, we found that protective antibodies (protective fluids) are up to 2 to 10 times higher in animals that use curd or whey on a regular basis. This means that organisms that feed on milk are protected 10 times as much against Upper respiratory infections, especially influenza.

He pointed out that influenza is a serious respiratory disease, and that the consumption of curd and whey, which contains a large number of bacteria, passed at least one time within 24 hours, protects against similar respiratory infections, especially influenza.

Duran said that the most important way to protect against viral infections such as influenza is to strengthen the immune system and a balanced diet.

He stressed that a balanced diet should contain important amounts of curd or whey, which contain microorganisms, that contribute to protecting the digestive system.

He pointed out the importance of consuming curd or whey, after putting it in a warm place for at least 24 hours, to increase the level of bacterial yeast.

He said: "The higher the level of bacterial yeast in curd or whey, the more beneficial bacteria will be in it, and so it will have more benefit in it and a greater increase in strengthening the immune system."

It sounds more like the bacteria in milk make the difference... Is this benefited from only raw milk or also milk treated in UHT or pasteurised? Most of the (good) bacteria are gone after heavy processing and treatment.
