Watermelon and cucumber salad is a fresh salad , perfect for a summer day.

Ingredients for 10 servings:

  • 1/2 large watermelon, diced

  • 1 cucumber, diced

  • 1 red onion, diced

  • salt , to taste

  • feta cheese, to taste

  • 80g (1/3 cup) balsamic vinegar

Preparation:

Step by step mode:

  1. Cut a large watermelon in half lenghtwise

  2. Dice half of thre watermelon and save the rind for later

  3. Place watermelon, cucumber, red onion, salt and balsamic vinegar into large bowl and mix together

  4. Pour salad into hollowed out watermelon rind(optional)

  5. Enjoy
