  • Hi friends. Today is Saturday. Day for cleaning, cooking and no time to rest, only in the evening. Today I prepared Ukrainian dishes of borsch and dumplings. Even if you want your Ukrainian food far from home. We prepare very tasty dishes in Ukraine. I want to tell you more about my favorite Ukraine.

Ukrainian cuisine

Ukrainian cuisine has traditional dishes that make it recognizable. And if you delve into the culinary traditions, you will find such names and recipes that will pleasantly surprise you.

Borsch

What kind of Ukrainian is without borscht? Foreigners are always treated to this traditional first course. You can find more than 50 recipes for borscht in cookbooks, because it is prepared differently in each region. Rich meat, seasoned with lard ... Or lean with beans or mushrooms - this is cooked during Lent, and vegetarians will also be satisfied. You can put fish instead of meat. In addition to traditional beets, potatoes, carrots, onions, cabbage and tomatoes, which is not added to the borsch for spiciness! Some recipes even have apples, dried fruits, prunes! Donuts with garlic are often served with borscht.

Lard is our everything! No wonder they say: lard is a Ukrainian drug. Without him, we are simply nowhere. And how many anecdotes about lard and Ukrainians! There are many recipes for salting lard. The simplest: chop garlic, mix with pepper, rub the mixture on the belly or lard and refrigerate for three days. You can add fragrant spices.

Aspic

Not all foreigners will "understand" our jelly - a jellied snack from different types of meat. But Hungarians will definitely appreciate: they have jelly - also a national dish, there are even festivals of jelly. Ukrainians traditionally serve jellies with horseradish and mustard.

Meat dumplings

And now let's move on to the meat masterpieces. Meat for krucheniks (usually beef or pork) is beaten, then wrapped in stuffing, and the roll is tied with string. You can fry and then stew. In the regions of Ukraine, krucheniki with different fillings are prepared: rice with onions, egg, dried apricots, prunes ... Mushroom stuffing is often used. The space for experiments is huge. For example, for hearty krucheniks, the meat is first stewed until half-cooked in Volyn style, then a piece of lard is placed on it, covered with stewed cabbage, and wrapped.

The whole secret is in a piece of good pork or beef tenderloin. It was marinated in kvass, rolled in flour, fried in butter - and then baked in the oven until ready. The cake was solemnly prepared for Christmas and Easter. Modern housewives use lemon instead of kvass: they rub a piece of meat with it, and it is convenient to bake in the sleeve.

Potato pancakes from Zhytomyr

Ukrainian Polissya is famous for potato crops and dishes from it. A potato monument has even been erected in Korosten in the Zhytomyr Region! A festival dedicated to this dish is held here every year. And you will not try any potato pancakes: with meat, cheese, mushrooms and cottage cheese.

Hutsul white mushrooms The recipe for their preparation is very simple: boil, fry in oil, stew in sour cream or cream, add green onions, parsley. But it's all about the mushrooms themselves! Be sure to follow them to Bukovina, as boletuses are a real treasure of the local forests.

Roast with mushrooms

Potato roast with mushrooms in pots is usually served in all restaurants of Ukrainian cuisine, it is easy to cook at home. But you should definitely try this dish in Western Ukraine, where you will be served it with white mushrooms, and not some store-bought mushrooms! Hutsul roast is original in that potato pancakes, meat and mushrooms are laid out in layers in a pot. And all this with sour cream!

Banosh

Another dish from Hutsul cuisine is banosh (or banush). It would seem that what can surprise corn porridge? The whole secret is what it is seasoned with: sour cream or cream is added during cooking, and fried cracklings and cheese are placed on top.

Poltava dumplings

Residents of the region of the same name are often called "Poltava dumplings" - their regional dish has become so recognizable. Dumplings are available without stuffing, and with meat, liver, mushrooms. Poltava annually hosts a festival dedicated to dumplings, as well as a monument to the venerable dish.

Dumplings "Native brothers" dumplings - dumplings - are part of Ukrainian folklore. Remember - "And my sweetie wants dumplings ..."? Unlike dumplings, the filling of dumplings can be more diverse: cheese, vegetables and berries. In the city of Alberta in Canada, the Ukrainian diaspora has erected a 9-meter monument to the dumpling. There was a monument in Ukraine - in Cherkasy, but, despite its popularity, it was dismantled: the court moved to a nearby building, and its proximity to the dumpling was considered inappropriate. Lutsk hosts a festival of national cuisine, which grew out of the dumpling festival.

Stuffed cabbage

Traditionally, Ukrainians also prepared stuffed cabbage for the holidays: they wrapped the stuffing in cabbage leaves. The Book of Records of Transcarpathia records 25 species of stuffed cabbage, which were prepared at the festival in one of the villages.

Interestingly, in addition to Ukraine, France and America claim the "authorship" of the recipe for cutlets of beaten chicken fillet, in which a piece of butter is wrapped. Culinary legends say that Kyiv-style cutlets could have come from there.

Delicious turkey sausages are prepared in Volyn. Eggs, grated cheese, butter, garlic, spices are added to the stuffing. Then form the sausages, fry them in a pan.

Pike perch in Kyiv style

Pike perch is baked with potatoes and cheese. The secret largely depends on the sauce, which is poured over the dish during baking. Use sour cream-mushroom sauce or sour cream with the addition of shrimp.

Translator

For sweet - generous, like the whole Ukrainian table, pastries! Translator is a cake made of yeast dough, which is laid out in layers: dough-filling. Prepare it with poppy seeds, nuts, cherries, jam and other fruit fillings. And you can alternate several in one pie. Verguny Verguny is also popular in Ukraine - products made of yeast dough, to which alcohol (vodka, cognac) is usually added. The dough is thinly rolled out, cut into strips, then weave them, hence the second version of the name - braids. Real Ukrainian verguny (unlike Russian firewood) is fried not in sunflower oil, but in lard. Serve sprinkled with powdered sugar.

Kyiv Cake

Earlier it was considered almost an obligation to bring Kyivsky cake from Kyiv as an inn. Now it can be bought in almost every Ukrainian city. Earlier, the Kyiv confectionery factory, which is now owned by Roshen, developed an original recipe. Legend has it that they forgot to put the proteins intended for the sponge cake in the refrigerator, and then, hiding the mistake, experimented. And so there was a cake that is loved by many generations. In Ukrainian cuisine, many recipes for pancakes and pancakes, with or without filling. And here, too, a huge space for culinary creativity. And we will share the original recipe of Chernihiv region. For pancakes (pancakes) prepare nut filling with milk, sugar, rum, orange peel and raisins.

Lviv cakes Galicia is famous for a wonderful dessert - cakes. Bake a tall whole pie with fillings (they can be different) and then cut into cakes. The top is usually watered with glaze. And try to say "cakes" only to Lviv cakes - they can be offended.
