How to make beef and roasted khichuri.

For cooking meat

One and a half kg of beef, 1 cup of chopped onion, 3 tablespoons of ginger, 3 tablespoons of garlic, 2 tablespoons of turmeric powder, 2 tablespoons of chilli powder, 2 tablespoons of coriander powder, 1 tablespoon of fried cumin powder (cumin powder) , 1 tablespoon hot spice powder, half a tablespoon of biryani spice (will), salt to taste, half a cup of oil.

For cooking khichuri

1 kg or 4 cups of polao rice, 1 cup of mugdal (to be taken), half cup of boot dal (soak three to four hours before), half cup of lentils, 3-4 cardamoms, 1 cinnamon, 2 to 3 cloves and cloves, ginger Quantitatively, half a cup of mustard oil, 3 tablespoons of ghee, 10-12 green chillies and salt to taste.

6 and a half cups of hot water (rice measuring cup).

Method

The meat ingredients in the pot should be marinated with the meat and cooked on medium heat in the oven. Water will come out of the meat so you don't have to give water

Once the meat is cooked and fried, when the oil rises to the top, it should be boiled with adequate amount of water.

If you want, you can boil it with four whistles in a pressure cooker, then it will be quick

There will not be much broth in the meat Cook over high heat until cooked through

Wash the rice and soak it in water for 30 minutes before cooking (30 minutes for basmati rice and 20 minutes for polao rice). Wash it and put it in a sieve

Fry the mugdal, cool it and soak it with rice Then the pulses will be cooked beautifully

Heat the mustard oil in a separate pot and fry for a few seconds with all the hot spices, ginger powder and whole green chillies. Now fry the rice with water and three kinds of pulses together for five to six minutes.

The better you fry the rice and pulses, the more fun and crispy the khichuri will be.

When the rice is fried, wait with hot water and salt until two bolag (fute) comes. Now mix the cooked meat with the rice and reduce the heat of the oven and cover it

Cover and cook for 25 minutes Do not open the lid in the middle. Otherwise khichuri cooking will be ruined After 20 to 25 minutes, open the lid and serve with ghee on top.

Remember

It is fun to cook khichuri with half of its dal as much as rice Measure rice, water, pulses in the same cup.
