Sugar syrup ingredients:
1 1/2 cups water
3 3/4 cups white sugar
Cornstarch paste:
2 cups water
1 cup cornstarch
1 tsp cream of tartar
flavor and color:
1 1/2 tbsp vanilla extract
2-3 drops red food color (depends on the color you like)
Coating:
1/2 cup cornstarch(more if needed)
NOTE: you can add powdered sugat for coating if you wanted but as for me I like the coating plain.
Procedure:
In a pot combine water, white sugar. Turn the heat on and stir until sugar dissolves. Bring to a boil. Continue boiling over med. low heat for 10min. and continue stirring. In a separate pot combine water, cornstarch and cream of tartar. Mix well until no lumps. Turn the heat on and keep stirring until it becomes a thick paste. Gradually add sugar syrup into the paste and mix after each addition. Reduce heat to low and simmer mixture for 1hr.& 15min. Stir mixture frequently. Turn the heat off and add vanilla extract and red food color. Pour mixture onto the greased mold and dust the surface part of turkish delight. Let it set up for 5hr. or overnight.
Coating:
Dust counter top with cornstarch. Loosen the edges and flip it onto the counter top. Peel the parchment paper of and Add cornstarch and Cut it into small cubes. Dredge cubes into the cornstarch and place it in a airtight container.
NOTE
This is mildly sweet. Some peopl put too much sugar but for me I don't like too sweet. And you need strong arms in cooking this.
