Ingredients for 10 people (removable ring shape of 24cm diameter):
Chocolate mousse:
300g friar powder chocolate
300g unsalted butter
300g sugar
8 whole eggs
Coffee mousse:
200ml fresh cream
2 tablespoons of Nescafé instant coffee
3 gems
75g sugar
300ml whipped cream whipped cream
5 sheets of colorless gelatin
Procedures to prepare it:
Beat the sugar with butter until light and fluffy. Putting the eggs one by one, always beating (you will have a cut face, that's how). Stop beating, mix the powdered chocolate, beat again for another 5 minutes until a creamy mousse. Place 1/3 of the mousse in the mold (it does not need to be greased or floured) and put in the oven preheated to 180C for 9 minutes. After this time, remove from time and let cool. Reserve. The rest of the mousse keep in the refrigerator.
When the base is completely cold, place the mousse on top, spread well and place in the refrigerator. Making the coffee mousse: put 200ml of fresh cream in a saucepan when it is warm / hot, put the instant coffee, stir well and turn off the heat. Stir until the coffee dissolves. Reserve. Place the 5 sheets of gelatin in a bowl with cold / iced water and as soon as it softens (2 minutes) press to remove excess water and put it in the cream with coffee. Stir for the gelatin to dissolve completely. Allow to cool while mixing the egg yolk: beat the 3 egg yolks with the sugar until it is white and fluffy and mix the coffee cream in the egg yolk. Reserve. Beat the 300ml of frozen cream in a whipped cream. Mix the coffee cream in the whipped cream. Put the mixture on top of the chocolate mousse that was in the refrigerator. Freeze for at least 40 minutes. When serving, disinform using a hot knife and sprinkle with chocolate powder (optional). Always keep in the refrigerator.

1kg potatoes
250ml milk
250ml fresh cream
salt and pepper to taste
1/3 teaspoon of nutmeg
25g butter
1 minced or crushed garlic clove
100g grated emmenthal cheese
