The Famous Asian Biryani Recipe..

Yes, it’s true. Biryani is the most popular dish among asians specially in Pakistan and India. From kids to elderly people everyone considers biryani as their favourite dish. Whether you get cravings for something tasty or some guests are coming to your house, it’s someone’s birthday or there is a picnic plan, biryani is there to solve the problem. You guys might be wondering what is so special about biryani? Today the recipe that I am going to share will answer all of your questions. Actually the people of Asia prefer spicy foods and what better way to quench the thirst of spices than eating Biryani.

Biryani is actually a dish which predominantly consists of rice. There is a list of spices which are added in it. It can be made with or without chicken. But I prefer chicken biryani. You can also add potatoes in it. I personally add potatoes every time I make biryani. But then there are some people who don’t like the idea of potatoes in it. Anyways, it’s up to you what you want to add. As long as the basic steps of the recipe are followed everything else is good. You know what adds to the taste of biryani? Raita, which is made by using yogurt and some other vegetables. There are two recipes for making Raita and I’ll share both today.

Let’s get started with the recipe.

Ingredients:

  • Oil

  • Yogurt

  • Ginger garlic paste

  • Chicken 

  • Biryani spices(salt, red chilli powder, turmeric powder, coriander powder)

  • Rice

  • Onion

  • Tomatoes

  • Green chillies

  • Lemon

  • Potatoes

  • Tamarind

  • Coriander 

  • Mint leaves 

  • Yellow food colour

Recipe: 

First of all marinate chicken with biryani spices, yogurt, ginger garlic paste and lemon juice. Keep it aside for at least one hour. The longer you marinate the chicken more tastier it will become.

Now take a frying pan, pour oil in it and turn the stove one. Cut thin slices of a large onion and put it in frying pan. Fry it until it becomes dark golden brown. At that point, dish it out and keep it aside as it will be later used for garnishing. Now cut 2 to 3 large tomatoes in thin slices and add them to oil , at this point also add potatoes because potatoes take time to be cooked completely. 

Tip: Cut potatoes in the form of small cubes so that they are cooked quickly.

Stir them until tomatoes get softened and paste is formed. It’s time to add marinated chicken in it. After the chicken has been added, stir it for a while. Cover the frying pan and let it cook for 15 minutes at medium flame. 

In a bowl, take some tamarind and add  one by four cup water in it. Mix it thoroughly until the water gets sour, remove the seeds of tamarind.

After 15 minutes, pour this tamarind water into the pan and mix it. Let it cook for another 10 minutes at low flame. After 10 minutes turn the flame off. 

In another pan, pour water and some salt and one kilogram of rice. Boil them. Don’t boil them completely.

Layering:

It’s time for layering. First set a layer of rice and then set the layer of the sauce we prepared. In this way, keep settings these layers.

After the last layer, sprinkle food color, fried onions, green chillies, lemon slices, coriander and mint on rice.


Cover the pan and keep it on low flame for 20 minutes.

Tip: For additional aroma and bbq like taste, burn a small piece of coal. After it is red hot, place it in a small utensil and place that utensil over rice, add one tablespoon of oil on coal, it will emit smoke. As the smoke starts, cover the pan tightly. So that all the smoke is absorbed in rice. 

After 20 minutes, our biryani is ready.

Raita preparation:

Recipe No. 1

Take yogurt and add 1 tablespoon of water in it. Then add salts and some red chillies powder. Cut an onion, cucumber, tomatoes and green chillies in the form of cubes and add them to the yogurt and mix. Raita is ready.

Recipe No. 2

Take 2 to 3 green chilles, half tomato, garlic pieces, coriander and mint. Grind  them using pestle and mortar. Take yogurt and add salt in it. Then add this grounded paste in it and mix. Raita is ready.
